How to cook better is the main topic of the week. First though I want to wish everyone a Happy Thanksgiving. If you are listening to this I am very grateful for you.

In this episode Mike and I give our knowledge on how to cook better. Though  neither of us are professional chefs we are both accomplished home cooks. We share with you some of the techniques that allow us to make great food.

We talk about cooking on the right temperature. Do not get a skillet scorching hot for eggs. Some food taste much better when cooked at lower temperatures. The opposite is true with a good steak. Having the skillet blazing hot to ensure a proper sear is best.

We talk about how using acid ( Not the fun kind, sorry) can improve flavors. Using an acid, like vinegar or lemon juice when cooking does a lot to make flavors pop. I always splash any vegetables I’m cooking with some vinegar. You will begin to notice when a dish could have used acid in the future. Also watching Food Network competition shows will make more sense now.

Once again Mike shares his way of cooking a turkey. I will admit that Mike makes the best turkey. Sorry Momma. His turkeys are always so moist and flavorful. No need to drown you turkey in gravy.

As many of you know I am a single guy. Being such a great catch you may find this absurd. Well I am very picky and have some eccentricities. A big one being that I’m paleo. Meals for the Week Paleo Style

Every week I cook a weeks worth of lunches for work week. It saves me money and allows me to stick to the diet. The diet in this case is the Paleo Diet. I’ve been more or less on it for a year with a bit too much off. To ensure I am sticking to it I precook healthy meals at home. This week I’m making Ribeye steaks with a sautéed brussel sprouts, Taco meat on kale with home-made salsa, Chicken thighs and cauliflower curry and Pork chops with broccoli and cauliflower with a mustard sauce. Sound fancy smancy but it’s cheaper than eating out for the week and easy. I spent about an hour cooking four delicious meals. Let me some you how.

Today I’m going to talk about Cheat Day. What is cheat day? One day out of the week I break my strict paleo diet and go hog-wild. In the past I’ve always eventually broke the diet and then getting back on from an unplanned diet is hard. The guilt associated with breaking from the diet is terrible too. So now I plan for it. There are some very good reasons why you should too. I’ll also tell you how taking breaks from most things brings you back with a stronger passion.
