Paleo Recipe: Zucchini Ramen

This week I’m going to skip the meals for the week and focus on one recipe. Last summer i was craving a bowl of Japanese Ramen. So my mind got to work on a paleo friendly version of it. What I came up with is Zucchini Ramen.  I use zucchini cut into strips as my noodles. Zucchini is pretty mild in flavor and does a great job of absorbing flavors.

Paleo Diet for Beginners

 

Today I’m going to talk about the Paleo diet. I’ve been eating a paleo style for over a year at this point and love it. I honestly cannot imagine ever going back to eating another way. It’s great for weight loss which is a big reason I chose it. Paleo has been proven to reverse or put into remission a great number of the autoimmune diseases that are spreading throughout the world. The basic premise is to attempt to replicate the diet of our ancient hunter gatherer ancestors.

Meals for the Week Paleo Style

Every week I cook a weeks worth of lunches for work week. It saves me money and allows me to stick to the diet. The diet in this case is the Paleo Diet. I’ve been more or less on it for a year with a bit too much off. To ensure I am sticking to it I precook healthy meals at home. This week I’m making Ribeye steaks with a sautéed brussel sprouts, Taco meat on kale with home-made salsa, Chicken thighs and cauliflower curry and Pork chops with broccoli and cauliflower with a mustard sauce. Sound fancy smancy but it’s cheaper than eating out for the week and easy. I spent about an hour cooking four delicious meals. Let me some you how.
